You can buy a huge amount of plastic sheeting for very little money at any building supply place there is. Sometimes they sell it in precut rolls, sometimes you can buy it by the foot, especially in the heavier grades which will be more suitable for building something out of. That kind of plastic isn't clear, though, it's kind of cloudy to look through. You might want to check out clear vinyl at a fabric store. They sell that for using as tablecloths, and you can buy as little as half a yard. If you want to see the snakes easily, that might be a good choice for the front. It's pretty tough. If you want or need tape that will stick nicely to plastic, look for the red plastic tape used for vapour barrier in a house. It's not cheap and it's not pretty, but it's about the only tape that will really really stick to plastic. Pretty much all the others will eventually let go. Another possibility for something easy to see through is the stuff they sell for putting on windows to insulate them. It goes on with sticky stuff along the edges, the plastic gets stuck to it, then you shrink it tight with a hairdryer. It's extremely clear, tougher than it looks, you can stab it with a finger and it should be fine, but it will puncture with anything sharp. Cat's claws, for instance, did mine in when the cat swiped at a moth. You also have to be sure that you have a good clean smooth surface for the sticky stuff, or it will pull away as the plastic shrinks with the heat.

I can't recall it's name but go to your local hardware store and ask . It's also used as fly screens in varying thicknesses. It's PVC apparently. Commonly used in Cafes thus called CAFE BLINDS.

If it is laminating sheets, just one sheet of plastic adhesive, then yes, you need to use two and sandwich the paper in between. What I do is lay the laminating sheet with the liner facing up. I peel off the liner and center my paper on the adhesive. Then I take just the end of the liner off another sheet and place it very carefully lined up with the first one, adhesive side down. Then I carefully pull the liner off as I smooth the top laminating sheet over the paper. You have to do it very carefully to avoid wrinkles. Then you can cut off the excess right around the edge of your page if you want to; it is very hard to position the sheets without a little bit of overhang with adhesive exposed. NOW, if it is a laminating pouch, that is a totally different thing. You have to place your paper in between the two sheets of plastic that make up the pouch and peel the liner paper off the side that has liner paper, and smooth it over your page. But I am pretty sure you are just talking about laminating sheets like I described in the first paragraph. Hope this helps!

there are a wide variety of UV protective plastic sheeting in many hardware stores and online you do know however, just protecting the labels from UV light won't protect them from the actual light, which can still cause the labels to fade.

A spray adhesive will be your best bet. It will be the fastest and easiest and most cost effective considering the large quantity of items that you will be gluing. You will need an empty box to be your spray box so that you have a space to confine the over spray, and news papers to place in the bottom, enough to have on hand to put down on top of each other as a new clean surface after doing a few. I can suggest a brand called Super 77 Spray Adhesive or Elmer's Spray Adhesive. ***The Elmer's costs way less than the Super 77 (the Supper 77 is industrial strength stuff) Spray adhesives can be purchased at any home improvement stores, hardware stores, craft hobby stores as well as Walmart. I use spray adhesive all the time on a multitude of home crafting projects and it works on just about all surfaces. The only thing that it will do harm to is certain kinds of styrofoam, it will sometimes chemically melt that. But plastic surfaces will be just fine. I hope this helps you with your project!
