- i have been doing this for YEARS,,put 1/8 to 1/4 in of oil in clean pan,on top burner heat till oil shimmers or starts to lightly smoke,,shut bnr off let cool and u are ready to go,,,when cooking heat pan to above 212 deg with some oil,,this will prevent the food from sticking,,if u have sm amounts of food stuck to bottom of pan put some table salt in pan with a little oil and scrub with a paper towel.when done cooking wipe pan out with paper towel and are ready to go again
