This is the recipe I use (modified from an old Better Homes Gardens recipe): - 2 layers of pie crust - 6 cups baking apples (I use Granny Smith), peeled thinly sliced - 1 tbsplemon juice - 3/4 cup sugar - 2 tbspflour - 1/2 tspground cinnamon - 1/8 tspfresh ground nutmeg - pinch of pumpkin pie spice coriander (optional) - 1/3 cup golden raisins or other dried berries (optional) Line a 9 pie plate with half of the pastrySprinkle apples with lemon juiceCombine sugar, flour, spices in large bowlAdd apple slices and dried berries (if using)Toss gently to coatTransfer apple mixture to pastry-lined pie plateTrim bottom pastry to fit the edge of the pan, and place other crust over mixturePinch edges to seal and cut slits in the top crust Cover edges of crust with aluminum foilBake at 375 degrees F for 40 minutes; remove foil and bake another 15-20 minutes or until filling is bubbly(If desired, brush pastry top with milk and sprinkle with sugar cinnamon before baking.)
