Forget the EMT it is not strong enough to do what you want. It will bend when it has pressure applied to it. Use schedule 40 or 80 steel pipe and have all of the fittings welded. Also the T is NOT an EMT fitting only for pipes. The Standard pipe thread and EMT may be usable but EMT is NOT a threaded material, rather the fittings are threaded and they then are placed on the end of the conduit and physically tightened. Go to a hardware store in your area and look and thoroughly investigate what you are planning to do. EMT is the WRONG material.

cpvc, copper and pex pipe have the same outside diameter. You can run the mains (hot and cold) in cpvc, use reducing couplings or tee fittings to get to 1/2 or 3/4. From there you can use sharkbite couplings to connect the cpvc to copper.

I've got the same things in the building I work in. There Hard wired smoke fire detectors. The red light tells you the system is active. The other smoke alarm on the ceiling is probably a backup in case the building looses power. NOTE: Carbon Monoxide is heavy.The detectors are usually located near the floor.

Most new homes are using PEX- I personally have as much faith in PEX as the plumber here has in Shark bites- but I LOVE shark bite joints. Unless you are competent in sweating copper, use the shark bite connections. You will be doing a lot of remodeling to open the walls throughout the house and replace the pipes - big job. Skip the PEX tool from a rental center- any plumber who uses PEX will tell you unless you know how to use the tool properly, just like sweating copper, the pex will fail at the connectors.
