Based on your description, maybe dark brown would be better as it will provide a better contrast with your current kitchen color scheme. You should also change your backsplash at the same time as the countertop. I would pick a third color that matches well with the beige and the dark brown. Good luck and have fun remodeling!
Q:Where can find a tile cutting service? ?
A lot of places that sell tile will do this service. Home depot and Lowes does too. I believe , but not sure they charge for all cuts but call them to check their policy. A lot of places that sell tile will do it for a small fee. When I had my store we cut a customers tile ( if they bought it from us) for free , up to ten cuts and then a dollar a cut after that. Or a dollar a cut if they bought the tile some where else. Call tile store or where you bought the tile. Q:Screws in Ceramic tile?
You have to drill holes, using a masonry bit, thru the tile, and use an anchor of some sort. Best would be some sort of toggle bolt thru the drywall itself. A plastic expansion anchor would suffice. Any force on the tile itself, may cause eventual breakage.

Almost any kind or tiles will work excellent for a residential kitchen floor. Porcelain, ceramic work fine. The proper installation is the most important thing . I would stay away from stones on the floor in a kitchen. Harder to maintain but they are beautiful in less foot traffic areas. Any type tile with a multi colored look helps hides day to day dirt and looks better between sweeping. There are a multitude of stone looking ceramics and porcelains. That the way I suggest. Q:how easily does tile chip?
Ceramic tiles comes in several grades of toughness. It's not too fragile, but use caution not to drop heavy objects. Do you have extra pieces of tile that match? Always buy 10% overage for replacement.
Q:can you lay carpet over tile?
Yes it can be done if the tile is secure and not a beveled edged tile. Tack strips can be glued and screwed into the tile like a cement floor. The unfinished part will have to be filled in or at least brought up to be flush with the unfinished tile ( a few ways to do that.) To rip out tile , which is a labor intense job, I used to charge 2$ a s/f If you mean vinyl tile , all you need to do is treat the edges with a filler and lay carpet over it. Q:Porcelain tile uniformity concerns?
I'm not sure what you're looking at but all the porcelain tiles I've seen are square. All square. Very square. There should be no uniformity issues whatsoever. Go to a home improvement store and take a look. The tile type really has very little effect on spacing. However if you want 24 tiles I would suggest 1/4 grout lines at least. It will be extremely difficult to maintain a straight even grout line If you go 1/8. Imagine, if for some reason one tile was out of square a little or slightly offline (which does happen) the grout line would disappear completely. The grout would also be more likely to break if there was any movement in the floor. If you insist on 1/8 spacing, it can be done, but the results will be almost definitely poor.
