Q:how does steel become stainless?
Stainless steel is formed due to other metals present, that are resistant to corrosion. The main one is chromium, which is an excellent protector. Hardness in steel is due to other metals, as well as the carbon content. Chromium, vanadium and tungsten make steel extraordinarily hard. High carbon content makes steel hard but brittle.

As first answer says, if you look at the number of commercial steel alloys available and consider that any given alloy can be heat treated to a wide range of physical properties, there are thousands and thousands of potential combinations. Technically, steel is an alloy of Fe and C but there are Fe-C alloys that are called cast irons, not steel, and... there are lots of alloy steels which have significant amounts of other elements added like Cr, Ni, Nb, V, Mo, etc. Fe alloys that have a lot of Cr and or Ni added are called stainless steels and there are dozens of them and many of them can be heat treated to produce a wide range of properties. As far as the strongest or the weakest, you have to get really specific about exactly what you mean because some steels are designed for room temperature properties, some are designed for elevated temperature properties, some for static loads, some for impact loads, some for wear resistance, etc, etc.. Steels make up the largest family of metal alloys (by weight and by volume) that humans use. There are a number of reasons for this but the big reasons include: 1) there is a LOT of iron on earth 2) it is relatively cheap to produce 3) you can easily change the physical properties over a every wide range. As an example... you can take a piece of steel that is so brittle it will shatter if you drop it on the floor and heat treat it so you can bend it like a pretzel without cracking and then heat treat it again to make it very strong and tough (resistant to fracture).

Q:keeping a stainless steel stove clean and shiney?
I have a combo of black and stainless in my kitchen; not sure which one is worse some days. For normal everyday stuff, hot, soapy (Dawn), clean dishwater and a microfiber cloth work great. For quick touch ups, a 50/50 mixture of window cleaner and rubbing alcohol also works great. The window cleaner gets the grease and the alcohol helps with streaks and makes the cleaner germ killing. Use with a microfiber cloth. For really nasty burned on stuff, I'd use a sponge with a non-stick cookware safe nylon scrub pad on it and some of the hot, soapy water. Just lay the damp sponge on the spot, let it soak a bit and see if it comes off. If not, try a little Barkeeper's Friend. Dampen, sprinkle, smear it around a little and let it soak for about 10 minutes. Then scrub with the sponge. Wipe up the residue with the microfiber cloth. The microfiber cloths are really key; they wipe more efficiently than any sponge, wipe, paper towel, dish rag. Get several and change them out frequently. You just wash and dry them; no fabric softener and you're ready to use them again. And it wouldn't hurt to keep a protective coat of a good stainless steel product on there either. That helps keep the stuff from getting such a good hold. But I've found that most of those are pretty bad at cleaning; so clean it first, then polish.
