Q:how carbon is being alloyed during steel making?
It's not really that hard. You can use your charcoal grill to do it. First build a large fire in it and then bury the steel in the coals. It'll only take about ten minuites or so for the steel to heat through. Then pick it out of the coals with tongs and drop it into a bucket of water. Repeat as desired. Eventually it'll get as brittle as glass. To fix this, you must anneal the metal. Again heat the metal in the coals, only this time let it stay there until the coals go all the way out all by themselves. Next day when all the way cool, Take it out and clean it off. The steel dresser was a person who would clean the freshly made cast steel pieces at a foundry/ steel factory. The steel is melted and cast into shape so there will be like a little raised line where edges of the mold met or a few blobs sticking out where the hot steel dripped over the edge or something. The dresser was the person who got rid of that kind of stuff to make a more finished/even product.

Worth very little as far as I'm concerned. It has a very poor co efficient of heat, is hard to lubricate to keep the food from sticking and will develop a hot spot easily. My preference is a good quality cast iron, it is heavy but conducts heat well and spreads it evenly. Stainless with copper bottoms is marginal for boiling water but it does clean easily. There are several alloys on the market that are usable as cook ware. Aluminum is worse than stainless. Of the pure metals, copper is the best conductor of heat, cast iron is my choice, spun steel does work. Hope this helps. Never wash cast iron cookware with soap and water.
