No, spinach is not a good source of iron or calcium. It's a high oxalate food. Oxalate's inhibit your body's ability to absorb and use vitamins and minerals. Kale is a low oxalate food. The combination of the iron's heat and steam breaks the hydrogen bonds that were previously formed into a wrinkled state. When those wrinkled bonds are broken, the weight of the iron straightens out the cloth fibers. When the fibers cool, the hydrogen molecules bond once again in the straightened state.
