- No, iron citrate won't bind to much of anything. The citrate chelates the iron, which basically means it encloses the iron like a cage or a protective bubble. So iron citrate isn't really a salt per say. Most salts dissolve pretty easily, usually in water. But iron citrate doesn't dissolve in water; the only thing it seems to be able to dissolve in is ammonia.

- Termites are a rich source for iron in the diet, but to extract iron from insects as a source of iron itself would cost far more than just extracting the iron from the ground! - It's the iron which is the toxin here rather than the chloride ion. Iron causes loads of poisoning events. When ingested it first would make you very sick but then you would suddenly seem OK. However, within a short period after, your bloodstream would be carrying the absorbed iron around this would cause imbalances damage to the organs. There was even an episode of ER with an iron poisoning storyline. Good info below.
