Simply you will have a smoke detector of some kind in the AHU, and when smoke is detected it sends a signal to the BMS and closes the Damper and / or the Air intake Fan. Cut the pipe off with a pipe cutter. Then, you can use a sharkbite cap to cap it off until you can repair it properly. Pipe cutter and cap are likely to be found at just about any hardware store, and would probably cost less than $20 total. Sharkbite is not the only option, but they are very easy to use if you have no experience with plumbing. Use the regular copper threaded fitting. Most homes are connected to the water meter with 3/4 fittings. Water meters are usually made from lead-free bronze alloy - so copper will be fine.
