This is a geology question rather than a botany question. Apatite is 5 on the Moh's Hardness Scale and Quartz is 7 on the scale. So, the mineral's hardness could be anything from 5 - 7. If you tested the unknown mineral against Orthoclase Feldspar (6 on the scale), you could narrow down the range somewhat.

If your identification is correct, then the mineral would have no cleavage and irregular, conchoidal fracture, would scratch glass, and would be scratched by a nail. In addition it would not react in acid. If there were crystal faces they would typically be striated and would reveal a 6-sided crystal. Another possibility is one of the feldspars, orthoclase. Orthoclase, however, has cleavage and won't scratch glass. Both Orthoclase feldspar and quarts will leave a white streak.

Quartz is very resistant to weathering. It sounds like you may have calcite. If you have hydrochloric acid, and put a drop on your rock sample and it fizzes, it's likely calcite. I've never tried vinegar, it may fizz? Can you describe the shape of the crystal? i.e. square, rectangle, polygon, pointed tip... Does it scratch glass? How does it break? ie. Jagged edges? Smooth face? Round half circles like some broken glass does?

Plastic cuvettes are cheaper than quartz, for one! Did they mix the fluorescent dye in the plastic, too? I'd have to see what they were measuring, but you do know that plastic adsorbs certain materials that quartz will not. Perhaps there was some fraction of the saliva solution that they did not want transferred over. When doing antibody research, we routinely used plasticware to make the antigens stick to the plastic. That is a possible explanation.
