Same concept - you use a solar panel to power a remote something or other, only you would have to use a battery charged by day to run the camera at night. It does not look like you would need too powerful of a solar panel, the camera server says it needs less than 5w, no idea on the cameras, so check that out, but the whole system looks rather low power. You could easily get the necessary panels, maybe the battery too, for... I would say $200 (not in one package, you would have to get separate things). Connection of everything would be simple, no electrician needed (but keep that to yourself, depending upon state rules and regs).

- Assuming that you have / will upgrade wiring sizes to carry the extra wattage, that the new total wattage resulting from the addition doesn't overload any existing charge controller, diodes and / or inverter you have installed, then paralleling it straight into one of the other 2 volt groups should do nothing but add current to the system. True, it will be somewhat imbalanced, but it will work. Your other options would be to reconfigure everything down to it's native 2 V configuration which will raise current and lower voltage, with the additional panel creating the additional current to raise the wattage or to put it in series with the other 4 panel clusters so that you would get 36 V and additional current to account for the raised wattage. One last approach might be to set it up on another battery bank of it's own (small and at 2 V) to then connect to the same inverter. You'd be getting more power and storage capability that way, sort of a partial backup system, really, that will take some of the load off the other components to help extend their useful lives and get a bit more flexibility into it as well. The choice is yours here. That is all the ways that the system can be connected in, assuming everything in the first sentence checks out;-) It's difficult to make a recommendation without knowing what other components are in use and what the maximum ratings they carry are. Just remember that parallel connections add current and voltage stays the same, series connections add voltage and the current remains the same and you can figure out what to do with this thing to help you if you stay within maximum ratings for the charge controller, diodes and / or inverter involved. - Solar panels are not going to be able to run a pool pump 24/7. They will only produce their rated electricity for 4 to 8 hours a day. For the balance you will need a grid connection or a battery backup. Running the AC would require different power levels depending upon humidity, outside temperature levels, solar gain for the house, and insulation levels. An underground house in Maine will be much easier to AC than a Glass house in Arizona. First find the power requirements. If you had the existing equipment they will have a label with the power requirements or the minimum breaker required if nothing else. For example the pool pump may require a 0 amp 240 breaker while the AC may require a 30 amp 240 breaker. That would be 2400 watts for the pump and (30 x 240) 7200 watts for the AC or a total of 9.6kW each hour of operation. (max) You will next need to find the rated capacity of the solar panels. If each panel were rated at 300 watts then you would need 32 panels for the daytime use and perhaps more to fill in a battery backup. All the numbers are very rough estimates.
