I'd go with stainless steelConducts heat well, easy to clean and keep nice (get a can of Barkeeper's Friend and no scouring pads)The big advantage is that acidic foods don't react with stainless as they can with aluminum cookwareThe reaction can make things have a metalic taste and turn the pan black or darkYou can get the copper bottomed if you like but I have all stainless steel cookware and I've not had any issues with itIt does take a bit longer to bring up to cooking temp but after that you can turn the heat down considerablyIf you get all metal handles, you can easily sear chops or steaks on the stove top and slide the whole works into a hot oven to finish.
