If you mean instead of tile, remember that unless you plan to paint it - concrete or cement is not waterproof. Think of a concrete pool - it requires periodic painting (maintenance). There are a lot of thin solid surface products out there if you do not want to look of tile. Tiling is not that hard as long as you prepare properly and take your time. There are alot of site with tiling guidelines out there - the important thing is to install/prepare the surface properly and seal the grout when you are done.

both of the above are true, vinyl is maintenance free but can look cheap, fake, and plastic. fiber cement is more expensive but looks rich, like real wood, and is virtually indestructible

What is the floor material? Never heard of floating ceramic tiles. Wood? Use the backer board or use the old fashion method of 2 concret base. Concrete already? Lay right on top of it

There's no need to tape the seams of cement board, as long as you get a good close fit it should be ok. You've made a wise choice using cement board, at least on the lower half of the shower enclosure area, greenboard, while being somewhat moisture resistant is not impervious to water damage. It should be used above the cement board and will do a good job there. The seams in it will need to be taped, at least above the top edge of the surround.
Q:Can I lay particle board over concrete/cement floor then install laminate wood over it?
Do NOT use particle board. There is no reason, as the laminate can be laid over the concrete with the proper padding. The particle board may swell and cause you issues down the road. Check the instructions on the flooring. Some require a plastic vapor barrier under them, while others only need the padding. 1/8 is not a big deal. The transition strip will bridge the difference. Be sure to check for peaks and valleys in the concrete, and fill in low spots. This will prevent the tongues on the planks from snapping off, leaving gaps in the floor. Allow the laminate to acclimate to the basement for a week or so before installing. Hope this helps. EDIT: You don't need anything under the flooring except vapor barrier or padding. They are designed to be able to be installed on a concrete base. Good luck.
