Q:Why is the most insulation needed in ceilings or roofs?
well insulation in general is to keep the inside temperature different than the outside. since hot air usually rises, i think it is to keep warm air form escaping in winter. also you don't usually have a heater in the attic, or air conditioning so insulation will keep the air in the attic from having an effect on the air within the house. that is my idea as to why

They may help, but as thin as they are, installing them would be about as easy as putting socks on a rooster!
Q:Can you use Great Stuff foam as insulation under a metal roof?
Great Stuff (and similar products) stick to just about anything...and with vengeance. If you haven't used it ever, DO NOT let it get on anything else: it is the nastiest. To your Q; It's possible to cut this stuff after it dries up, but still would look like crap. Get some sheets of 'blue board' (an extruded polystyrene) and cut it to fit around structural members. Cuts with a hand saw, knife, and is easy to work. There's a glue for it but I haven't used it on all surfaces. It would look far better than Great Stuff alone.
Q:Is mineral wool any good for under roof insulation?
Yes, be sure to leave an air space between the top of the insulation and the roof deck to allow for ventilation, and use a vapor barrier on the interior side of the insulation.

not unless you want to be showered with fiberglass particles.

I prefer the roofing inserts, but they dont offer as much insulation as the covering types, the best option if possible is to replace it with a good glass type roof though

But 3' deep means there's about 180 pounds per sq foot of weight on your roof. About that point, I get up there and remove most of it (I leave about 12" thick). Still same on the thermal characteristics but safer on structural. .
