I can begin to point you in the right direction. It is a very complicated thing you are asking about. Solar panels produce direct current, in order to store that power for use at night, and on cloudy days, you need a lot of batteries. Those batteries store direct current. In order to use that direct current to power your refrigerator, you need to put it through a thing called an inverter. The inverter produces AC from DC. You may have seen one for sale to plug into the lighter in a car so you can use things that require AC in your car. The inverter looses power doing the conversion. Over time, you can purchase direct current appliances, and make the system more efficient. Years ago, a decision was made to go with AC because of transmission issues (you can move AC across a wire a long distance, and DC is more difficult to move). There are many requirements for special disconnects to prevent harm to the utillity company workers that must be considered. You will also have to have an inverter sized to match your panels. The simple answer is to connect your panels to something specific, without connecting it into your house wiring. An example is to connect your water well pump to solar power and disconnect it from the grid. But you will still need an inverter and will need to calculate the power demands of the pump and the amount of power available from your panels, which varies by your longitude and latitude. It sound like a simple thing to do, but without special training and experience you will be sorry if you try this yourself.

All panels except the really fly-by-night brands and factory seconds have this. 2) 25-year performance warranty. It's standard now for a manufacturer to guarantee that their panel will still produce 80% of the rated output after 25 years. Older panels may say 20 years. Junk panels will have no such warranty, or something ridiculous like 90 days or year. 3) Crystalline silicon. Monocrystalline or polycrystalline doesn't matter. Every few years, someone claims that they have an amorphous or thin-film technology that's durable. Being conservative, I'm still waiting for such things to be proven. Some crystalline panels have been in service since the 70's, although they are pitifully weak by today's standards. I've heard good things about the Sanyo HIT hybrid panels, but that's only from one person who had them installed.

Solar panels are not going to be able to run a pool pump 24/7. They will only produce their rated electricity for 4 to 8 hours a day. For the balance you will need a grid connection or a battery backup. Running the AC would require different power levels depending upon humidity, outside temperature levels, solar gain for the house, and insulation levels. An underground house in Maine will be much easier to AC than a Glass house in Arizona. First find the power requirements. If you had the existing equipment they will have a label with the power requirements or the minimum breaker required if nothing else. For example the pool pump may require a 0 amp 240 breaker while the AC may require a 30 amp 240 breaker. That would be 2400 watts for the pump and (30 x 240) 7200 watts for the AC or a total of 9.6kW each hour of operation. (max) You will next need to find the rated capacity of the solar panels. If each panel were rated at 300 watts then you would need 32 panels for the daytime use and perhaps more to fill in a battery backup. All the numbers are very rough estimates.
