Q:How to insulate the space between the roof pitch and ceiling/wall in my older home?
Loose fill cellulose can be blown into your attic. I don't know if I understand the protrusions that you are describing but if you can freely blow the cellulose fiber into this space it should serve as a good insulation. You don't want to poke it in with a stick because you don't want to compress it. If you cannot blow this product directly into the space, you would be better off stuffing it lightly with fiberglass batting. Just don't cram it too tightly. It needs to be loose to be most effective.

If "far corner" is N, NE, W NW, those are the coldest spots on a house during winter due to lack of sunlight. Here's a tip from my serviceman -- don't turn your furnace too low during the night. There is a break-even point where the energy used to heat up the environment is equal to the energy saved by keeping it at a lower temperature. The range is about 8 degrees on average, but that's here in the NE. This bore out very well last year during a bitterly cold winter that started in October and went well into May when I kept the heat "cranked up" higher at night. I used less fuel than I did the year before, which only had 6 months of normal winter. I used to turn it down to 55 at night, but I turned it down to 62 from 70. I was seriously overdoing it thinking I was doing me and the environment a favor :)

You want to insulate at the ceiling joist level, not at the roof-rafter level and provide ventilation for the remaining cavity. You also want to make sure you have the correct vapor barrier. But you do not want to insulate directly below and contacting the roof deck. One of the difficulties with rigid insulation is making it fit correctly and without gaps. So be careful of that. You may have to supplement the rigid sheets with foam spray at the gaps, around wires and pipes and so forth.
Q:Can I add reflective attic insulation to the inside of my roof, between the rafters?
the best floor insulation is the two on the roof or the 1st floor ceiling, (floor of the attic), no longer the two. If that is already on the ceiling, the attic is vented to the exterior, and insulating the roof could make little or no distinction. Laying one extra 'blanket on the floor is a thank you to bypass in case you prefer to enhance. Insulating a roof will boost the summer season temperature of the roofing, and could adversely result the life of a few components.
Q:If you are putting a new roof on, shouldn't you put new insulation in?
I think everyone is misunderstanding your question. I think what you are saying is that your insulation got wet, becasue of your roof leaking. The roofer wants to replace the roof but not the insulation. If your talking about an insulation board under the roof then I think your roofer is right. Just put a new roof on. If you talking about some kind of fiberglass batt insulation then it probably should be replaced.
Q:I need to know if I insulate the roof of my attached garage or just the ceiling?
if the garage is heated do it all the cost of the insulation vs the cost of heat today is outrageous doing it now will save a ton later
